ITALIAN SAUSAGE WITH PEPPERS AND ONIONS 


Ingredients:


1 lb Italian sausage (sweet or hot, as preferred)

2 tablespoons olive oil

2 bell peppers (1 red, 1 green), thinly sliced

1 large onion, thinly sliced

3 cloves garlic, minced

1/2 teaspoon dried oregano

1/2 teaspoon dried basil

1/2 teaspoon red pepper flakes (optional, for heat)

1/4 cup marinara sauce or diced tomatoes (optional for a saucier dish)

Salt and pepper to taste

Fresh basil or parsley for garnish

Italian rolls (optional, for serving)

Instructions:


Cook the sausages: Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the sausages and cook for 4-5 minutes per side, until browned and cooked through. Remove from the skillet and set aside.


Sauté the vegetables: In the same skillet, add the remaining olive oil. Add the sliced bell peppers and onions, cooking for about 5-7 minutes, until softened. Add the minced garlic, oregano, basil, and red pepper flakes (if using) and cook for another minute until fragrant.


Add marinara (optional): For a saucier dish, stir in the marinara sauce or diced tomatoes and let simmer for 2-3 minutes to combine the flavors.


Combine and finish: Return the sausages to the skillet with the peppers and onions. Let everything cook together for 3-4 minutes, until the sausages are fully heated and the flavors meld.


Serve: Garnish with fresh basil or parsley. Serve the sausages with the peppers and onions on their own or in Italian rolls for a classic sausage sandwich.


Helpful Tips:


For extra flavor, deglaze the pan with a splash of white wine or chicken broth after cooking the sausages.

Serve with a side of roasted potatoes, pasta, or a fresh salad for a complete meal.

You can add mushrooms or cherry tomatoes to the mix for extra veggies.
